Sardinian fregola Cuore dell’isola with fresh sausage

Fregola sarda is a typical Sardinian specialty, a pasta shape made from hand-rolled and toasted durum wheat semolina, which gives it a characteristic intense flavor and unique texture. Thanks to its versatility, it lends itself to numerous preparations, from seafood to more rustic dishes, representing an authentic expression of the island’s culinary tradition.

Ingredients

  • 320g Fregola Sarda Cuore dell’Isola
  • 700ml hot vegetable broth
  • ½ yellow onion
  • 120g fresh sausage
  • 60g grated Sardinian pecorino cheese
  • Extra virgin olive oil to taste
  • Chopped fresh parsley to taste
  • Salt and pepper to taste

How to Prepare

Chop the onion and sauté it in a drizzle of extra virgin olive oil; add the crumbled sausage. Add the fregola and toast it for a few minutes, then cook, adding the hot broth a ladle at a time, stirring, for 15-20 minutes. Once cooked, stir in the grated pecorino, season with salt and pepper, and garnish with fresh parsley and a drizzle of oil.
