Ingredients for vegetable lasagna:
- 12 lasagna sheets
- 1 zucchini
- 1 eggplant
- 1 red bell pepper
- 1 yellow bell pepper
- 2 ripe tomatoes
- Onion
- Garlic
- Extra virgin olive oil
- 500ml milk
- 50g butter
- 50g flour
- Salt to taste
- Nutmeg to taste
- Parmigiano Reggiano
How to make Italian lasagna
- Prepare the vegetables: Wash and carefully chop the vegetables and cook them for about 10 minutes in a pan with a drizzle of oil. Cook until softened, then season with salt and pepper to taste.
- Prepare the béchamel sauce: In a small saucepan, melt the butter over medium heat and add the flour, stirring until thick. Gradually add the milk and stir well to avoid lumps. Continue cooking for 5-7 minutes, then add salt and a pinch of nutmeg.
- Assemble the lasagna: If using lasagna sheets, cook them in boiling salted water for about 2-3 minutes. In a baking dish, spread a thin layer of béchamel sauce on the bottom, then add a layer of lasagna sheets and some cooked vegetables. Repeat the process, starting with the béchamel sauce, for 3-4 layers.
- Before cooking the lasagna: Sprinkle the last layer of your lasagna with Parmigiano Reggiano.
- Cook the lasagna: Preheat your oven to 180°C (350°F), cover the pan with aluminum foil, and bake your vegetable lasagna for about 30 minutes. Remove the foil toward the end of cooking and bake for 10-15 minutes until golden brown.
